Soba Noodles with Grated Japanese Radish and Citrus Sudachi (Sudachi oroshi soba)
One day I found a nice restaurant that serves soba noodles, and they have sudachi oroshi soba. I am a big fan of citrus fruits, so I needed to order the one. It was so good, I ate hot soba noodles because I visited them in winter. Both the citrus and grated Japanese radish harmony were just fantastic, which made me cook one at home. This is not my original recipe and you don’t really cook it but still, it tastes good. All you need is stuff that you get at a supermarket. You need 4 ingredients below, soba noodles, citrus sudachi, Japanese radish, and noodle soup base.

- 100 g Soba noodles Buckwheat noodles (dried)
- 80 g Japanese radish
- 1 Citrus sudachi
- As needed Mentsuyu Noodle soup base
Get all the ingredients and condiments.
The first thing you do is boil water for noodles. While boiling water, you move on to the next step.
While waiting water boiled, cut ingredients. Peel the Japanese radish off and grate it all. Cut the citrus sudachi into half.
When the water boils up, put the noodles into a pot, and boil for the appropriate time. After boiling the noodles, drain them well with a strainer.
Put noodles into ice water and chill them, until they get cold enough. Later on, drain them well once again.
Put drained noodles into a plate and put grated Japanese radish and citrus sudachi in a small bowl. Get noodle soup base, and help yourself.
