Soba Noodles with Grated Japanese Radish and Citrus Sudachi (Sudachi oroshi soba)

Sudachi oroshi soba is a type of soba noodle with grated Japanese radish and citrus sudachi. Soba can be eaten either chilled or hot, this soba is a chilled noodle dish that is served with a dipping sauce(mentsuyu). Citrus sudachi is one citrus fruit, with green peel, and light green fruit flesh, that looks like a lime but smells and tastes stronger than limes but not that sharp, a bit smaller than a table tennis ball. The best season for citrus sudachi is from the beginning of August to mid-September. They smell fresh and nice, so they can add some spice to meals. Sudachi oroshi soba is a good fit when it is hot, and feel like you want to eat something light. I personally recommend using citrus sudachi for cold meals but it tastes also good for hot meals. Since we also eat hot soba noodles you can enjoy a hot version of this as well.

One day I found a nice restaurant that serves soba noodles, and they have sudachi oroshi soba. I am a big fan of citrus fruits, so I needed to order the one. It was so good, I ate hot soba noodles because I visited them in winter. Both the citrus and grated Japanese radish harmony were just fantastic, which made me cook one at home. This is not my original recipe and you don’t really cook it but still, it tastes good. All you need is stuff that you get at a supermarket. You need 4 ingredients below, soba noodles, citrus sudachi, Japanese radish, and noodle soup base.

  1. Preparation

    Get all the ingredients and condiments.

  2. Boil water for noodles

    The first thing you do is boil water for noodles. While boiling water, you move on to the next step.

    -Follow the instructions on the package of the noodles about the way to boil them.
  3. Cut ingredients

    While waiting water boiled, cut ingredients. Peel the Japanese radish off and grate it all. Cut the citrus sudachi into half.

  4. Boil noodles

    When the water boils up, put the noodles into a pot, and boil for the appropriate time. After boiling the noodles, drain them well with a strainer.

    -Follow the instructions on the package of noodles about the way to boil them.
  5. Chill the noodles

    Put noodles into ice water and chill them, until they get cold enough. Later on, drain them well once again.

  6. Dish up

    Put drained noodles into a plate and put grated Japanese radish and citrus sudachi in a small bowl. Get noodle soup base, and help yourself.

    -I usually keep noodles soup base triple-strength at home. So when you eat with it, thin it out with water by 3 times. There are a few types of soup, straight, double-strength, and triple-strength. Follow the instructions on the package of noodles soup base you have.
